Job Summary

This Food and Nutrition Services (FNS) position supervises, directs, coordinates, plans, and monitors union represented staff and has oversight of patient meal, cafeteria, catering, and retail operations. Duties include the supervision of meal preparation and service, organizing, and maintaining quality food safety. Incumbent posts menus on a daily and weekly basis. Incumbent supervises the maintenance of all sanitary and safety standards for food preparation, serving and dining areas.

Incumbent maintains accounting and personnel records and is actively involved in the interviewing, selection, training, supervising and evaluating food service personnel, plans and coordinates job assignments, type and quality of service, and cost control. Incumbent assists management to initiate policies related to established standards for the overall functioning of an academic medical center food service facility. In addition, this position is responsible for opening/closing procedures of the Main Hospital kitchen and cafe production areas, Ambulatory Care Center Cafe and Scrubs East Cafe. The incumbent supervises groups of cooks in the performance of duties; trains cooks and food service staff; coordinates and reviews the quality of the work of cooks and ensures that daily food preparation meets the department standards for quality, quantity, timeliness, temperature and appearance. Incumbent will also work with industry on regulatory standards, for the overall functioning of the food service program. Incumbent will fill in to support operations when needed.

Qualifications

Minimum Qualifications - For full consideration, applicants are encouraged to upload license and/or certification if required of the position

  • Servsafe Certification within 6 months of employment.
  • Customer service experience working directly with customers.
  • Supervisory experience in a large food service organization with demonstrated oversight of purchasing functions.
  • Experience with food service inventory data input and the review process.
  • Experience with schedule input, and/or scheduling systems.
  • Leadership experience.
  • Performance management experience.
  • Intermediate to advanced level experience in use of Microsoft Word, Excel, PowerPoint, email, internet, relational database programs, and scheduling.
  • Demonstrated experience working and communicating with customers in a professional and caring matter.
  • Demonstrated understanding of menu terminology, forecasting and food service ordering.
  • Working knowledge of basic food terminology, sanitation/safety standards, portion control, and general food services.
  • Knowledge of Federal, State, County and University sanitation and safety requirements including; California Retail Food Code (CalCode), HACCP, The Joint Commission, TITLE XXII, and OSHA.

Preferred Qualifications

  • Culinary degree.
  • Experience working in a union environment.
  • Experience In use of scheduling and timekeeping system.

Work Environment

UC Davis is a smoke and tobacco free campus effective January 1, 2014.
